Now our most popular product, our medium cutting boards are made of a single block of hard maple, also known as rock maple or sugar maple. Hard maple is widely considered to be the best North American wood for cutting boards, since the grain is hard and fine, resisting gouges and the absorption of liquids or food scraps.
These medium-sized, nearly inch-and-a-half-thick boards measure about 10 inches by 13 inches (26 cm by 33 cm) on top and weigh about four pounds. While some competitors use lumber scraps glued together, we cut our boards form solid slabs of wood right in our Maryland workshops. Our hard maple comes from a sustainably certified mill that dries the lumber in western Pennsylvnia. The lumber is flattened and sanded, and we trim and put the finishing touches on by hand—including organic raw linseed oil and our own board balm, an organic mixture of plant-based carnauba wax and linseed oil.
