Solid wild black cherry wood is one of the finest things growing in our part of the world, and our supplier has given us two types: a "gummy" figured grain that has dark strips of natural resin setting off the grain and a "curly" grain that shows a wavy chatoyance (please specify in the order notes if you prefer one grain type over the other).
Like all cherry, your board will turn a deeper red over time when exposed to ambient light.
Note: Cherry is softer than our hard maple and oak, which makes it less durable against professional-grade chopping (although some chefs would prefer a softer surface because for maintaining a fine edge on a quality knife.
While some competitors use lumber scraps glued together, we cut our boards form solid pieces of wood right in our Maryland workshop. After our cherry is cut in the region and kiln-dried in Pennsylvania, we cut and plane it before putting the finishing touches on by hand--including organic raw linseed oil and our own board balm.
